Fabulous French Toast

Fabulous French Toast
-adapted from Alton Brown-

1 cup half-and-half
3 large eggs
2 tablespoons honey, warmed in microwave for 20 seconds
1/2 tsp. cinnamon
1/4 teaspoon salt
5 slices of Texas toast, cut on the diagonal OR 8 (1 inch) slices of French bread
4 tablespoons butter

The night before (if possible):
Set bread uncovered on counter to dry. Then, whisk together half-and-half, eggs, honey, cinnamon, and salt. Place mixture in fridge.

When ready to cook:
Pour egg mixture into a shallow dish and set aside.

Preheat oven to 375 degrees. Working with 2 pieces at a time, dip bread into mixture, and allow it to soak for 30 seconds on each side. Then, remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.

Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on the same cooling rack. When all the slices are browned, place the entire rack in the oven for 5 minutes. Serve with syrup and powdered sugar.
