WOW...We just had this for breakfast and it was unbelievable! Super quick and easy to make, but tasted a million times better than breakfast at a restaurant! The texture of of the french toast was fabulous-- I think the flour made it really unique, and they weren't too eggy at all (I can't stand eggy french toast!). Also, I loved that the batter was completely lump-free, thanks to the blender. On top of all that, the syrup was SO good, and made me feel like I was eating breakfast in Hawaii! This recipe is definitely a keeper! (But I do think I'll serve it with berries and whipped cream next time.)
Blender French Toast with Coconut Syrup

4 eggs
1 c. milk
1/4 tsp. salt
2 tsp. vanilla
1/4 c. + 2 T. flour
1 lg. loaf French bread, sliced thick (about 12-13 slices)
In blender, combine all ingredients except bread. Blend until mixture is lump-free. Transfer to a shallow bowl.
Quickly dip both sides of bread in mixture and place on greased, hot skillet (heated to 325 degrees). Flip over when browned. Serve with hot Coconut Syrup.
Coconut Syrup
1/2 c. butter
¾ c. buttermilk
1 c. sugar
½ tsp. baking soda
1 tsp. coconut extract
Place butter, buttermilk and sugar in a medium saucepan. Stir over medium heat until butter melts and sugar dissolves. Bring to a boil and boil one minute.
Remove from heat and add baking soda and extract, stirring constantly. It will bubble up, so if your pot is small, hold it over the sink to avoid spillage. Continue to stir syrup and let it rest for a few minutes before serving. Serve over almost any breakfast food: waffles, pancakes, French toast, crepes, etc.
I just stumbled upon your blog because of the crepes reference. Love the french toast and also the idea of serving the coconut syrup over crepes. It looked interesting, so I clicked the link...only to find it went to a stupid page with only pictures. Seems there are sites that "harvest" photos from people and then pin them. Drives me crazy! So I googled "french toast with coconut syrup" and found you! This syrup looks yummy, so I'm pinning...but making sure it links to YOU!
ReplyDeleteReally good! I like the idea of blending the batter, makes it much more like at the restaurant. We liked the syrup a lot too, but I put in 2 tsp b/c I was using imitation coconut so 1 wasn't strong enough. Thanks for the delicious breakfast!

DeleteI use Trader Joe's vanilla coconut milk when I make french toast, and it is really good! They also have coconut spray oil.

ReplyDeleteAnyone know how long this stuff lasts? It was amazing, but now my mom wants to try it, and I don't know if I should just save some from the batch I made yesterday, or just wait until I see her next week and make some more. Any thoughts?

ReplyDeleteI made this today and it was amazing! I replaced both the milk in the french toast batter and the buttermilk in the syrup with a can of rich and thick coconut milk (a 14oz can divided). It came out perfect and tasted wonderful. I think next time I'll try the syrup with coconut oil instead of butter and see how it compares. Thanks!

I found you through Pinterest and told my other half, I'm making this this weekend...only I didn't have coconut extract so I used rum extract instead...it was very good but I'm anxious to try it with coconut...and I'm also curious if there's a sugar-free version? I am diabetic and shouldn't be eating all this sugar but it was a nice for a treat :) Thank you!
