Tuscan Chicken Cakes with Tomato-Basil Relish

This recipe comes from my good friend Bethany. It is one of the most unique, flavorful, and delicious dishes I've ever tried! It is truly unbelievable!

Tuscan Chicken Cakes with Tomato-Basil Relish

3 C. cooked chicken, shredded & chopped
1C. Italian seasoned bread crumbs
¼ C. mayonnaise
1 egg lightly beaten
¼ C. prepared basil pesto
2 tsp. honey mustard
1/3 red onion finely chopped
2 Tbsp olive oil
1 package mixed salad greens
1/3 C. prepared balsamic vinegar & oil dressing
Golden Aioli (recipe follows)
Tomato Basil Relish (recipe follows)

Mix together chicken, ½ cup of the bread crumbs, mayonnaise, egg, pesto, honey mustard and onion. Using ½ cup measure, shape chicken mixture into 8 cakes. Lightly coat each with remaining bread crumbs. In a nonstick frying pan, place oil over medium high heat. add chicken cakes and cook until golden brown ( about 3 minutes per side) and drain on a paper towels.

Toss salad greens with dressing and divide among 4 serving plates. Top each pile of salad with 2 chicken cakes and drizzle with Golden Aioli. Top each cake with a dollop of Tomato – Basil Relish. Serves 4.

Golden Aioli:

½ Cup Mayonnaise
2 Tbls honey mustard

Tomato – Basil Relish:
1 Cup seeded and chopped tomatoes
½ Cup red onion chopped
2 tbls. fresh basil leaves slivered
2 tbls. prepared balsamic vinegar and oil dressing
1 tsp prepared basil pesto
Mix all ingredients together.
