Spinach and Bacon Quiche

Spinach and Bacon Quiche

9 inch frozen pastry shell, uncooked
12 strips bacon, cut into bite-sized pieces
1 onion, chopped and sautéed in olive oil until golden
4 eggs
2 c. heavy whipping cream
frozen spinach, thawed and chopped

Beat eggs and cream for 3 minutes. Add remaining ingredients and fill pie shell. Bake for 15 minutes at 425 degrees. Reduce heat to 300 degrees and bake for 40 more minutes. Cool slightly and cut into 8 slices.
