Salad for Sixty

Salad for Sixty

Stir together:
1 ½ c. sugar
2 tsp. dry mustard
2 tsp. salt

Mix in blender:
2/3 c. red wine vinegar
1 Tbs. grated onion (or shake in some onion powder)
2 c. vegetable oil
1 Tbs. poppy seeds
Slowly blend dry ingredients, then blend on high to emulsify.

4 bags mixed greens from Costco
1 ½ c. sliced almonds or toasted pine nuts
3-4 large cans mandarin oranges, drained OR sliced fresh strawberries
1 c. sliced green onions or ½ c. finely diced red Bermuda onion
8 diced avocados

**Don’t overdo the dressing!
