Ricotta Cheese Pancakes

YUM. These are very unique pancakes and I LOVE them. They're thin and eggy. Personally, I make them with fat free ricotta.

Ricotta Cheese Pancakes

Blend until smooth:

2. c. ricotta cheese
¼ c. oil
¼ c. sugar
6 eggs
½ c. flour
½ tsp. salt

Pour onto hot griddle. Serve with syrup, or fresh fruit and whipped cream, or jam and powdered sugar.
