Hot Artichoke Chicken Sandwiches

This reminds me of my mom's hot artichoke dip, but in a sandwich form. SOOO good!

Hot Artichoke Chicken Sandwiches

3-4 grilled chicken breasts
1 can artichoke hearts, drained and chopped
1 small can diced green chilies
¾ c. light mayonnaise
1 c. parmesan cheese (from the green can)
1 large loaf of French bread, slice lengthwise

Mix artichokes, chilies, mayo, and cheese in a large bowl. Microwave for 2 minutes. Stir until cheese is melted. Place bread on foil-lined backing sheet. Layer sliced chicken on bread, and top with artichoke mixture. Broil for 3 minutes, until golden and bubbly. Top with remaining bread or serve open-faced. Makes 3-4 sandwiches.
