Hearty Tortellini Soup

Hearty Tortellini Soup


2 cloves garlic, crushed
1 T. butter
2 (13 oz.) cans chicken broth
1 (8 oz.) pkg. cheese tortellini
½ t. Italian dressing seasonings
1 bay leaf
1 (16 oz.) can stewed tomatoes (I buy the diced ones)
1 (10oz.) package frozen spinach, thaw and dice
Freshly grated Parmesan cheese

In a large saucepan, over medium/high heat, sauté garlic in butter for 2-3 minutes. Add broth, tortellini, seasonings, and bay leaf. Heat to a boil, reduce heat, and simmer for 10 minutes. Add tomatoes and chopped spinach, and bring to a boil. Reduce heat and simmer 2-3 minutes. Serve topped with parmesan cheese accompanied by French bread or garlic toast.
