Fried Wonton Salad
Romaine Lettuce, 1-2 full heads or 3-4 romaine hearts
Sliced almonds, approx. ½ c. (or a little more), lightly toasted
Mandarin oranges OR (I use clementine slices, cut in half)
Green onions, 3-4 chopped, including tops
Sesame seeds, approx. 3 Tbs.
Wonton wrappers, fried and broken
¼ c. rice vinegar
¼ c. sugar
½ c. vegetable oil
1 ½ tsp. salt
Fry wonton wrappers in an inch of hot vegetable oil. Drain on paper towels and sprinkle with salt. Place in ziplock bag, and gently break into large chunks. Don’t crush!
Slice lettuce, green onions, and clementines, and place in large bowl. Top with toasted sesame seeds, almonds, and crushed wontons. Drizzle with dressing and toss. Serve immediately.
