Danish Pancakes


It's a tradition that we make these for every General Conference. They are delicious, and BEST served with homemade jam. (I try to always have a stash of peach jam and strawberry jam in my freezer!)

Danish Pancakes a.k.a "BIG PANCAKES"

3 c. flour
4 T. sugar
2 tsp. salt
½ tsp. nutmeg

Mix in big bowl. In separate bowl, beat:

8 eggs
3 1/3 c. room temp. milk
Add 1 c. butter, melted

Add egg mixture to dry ingredients and combine well. Add more nutmeg to taste, if desired.
To cook, heat 10-12 inch skillet over medium heat. Pour about 2/3 c. batter in center of pan and swirl around until it has reached outer edge of pan. Try to make pancake thin and even. When lightly browned, flip and cook on reverse side. Serve immediately.

Spread hot crepes with with homemade jam, roll up tightly, and dust with powdered sugar. Top with fresh fruit, if desired.
Yields: Approx. 16 large pancakes
Weight Watchers Point Value = 6 points each (without jam)
