Creamy Potato Soup

This is such a great soup recipe. A classic in our home. My husband never lets me try other potato soup recipes because this version is his favorite.

Creamy Potato Soup

-adapted from Susie B.-

1 ½ c. chopped white onions
1 ½ c. chopped celery
3 c. diced potatoes

White sauce:
1 c. butter
1 c. flour
1 ½ quarts half and half (I've also used fat free half and half and it works well)
2 ½ tsp. kosher salt
freshly ground pepper

1Tbs. red wine vinegar (add at the end)

Toppings: bacon, chives, cheddar cheese (optional)

Place vegetables in large stockpot. Barely cover with water, and cook until tender.

Prepare white sauce in medium saucepan. Then, pour over vegetables and water when veggies are tender. Just Before serving, add vinegar if desired.

Serve the soup by itself or add toppings to dress it up.
