Cream Cheese Black Bean Burritos


These are really filling and great. Plus, they have tons of veggies packed inside (but disguised), which I always love.
Cream Cheese Black Bean Burritos


In large skillet, combine the following and sauté for a few minutes:
2 T. oil
1 sm. onion, chopped
½ red bell pepper, diced
½ green bell pepper, diced
1 t. minced garlic
1 t. minced jalapeno peppers

Add the following ingredients and cook for about 5 minutes, or until heated through:
1- 15 oz. can black beans
1- 15 oz. can diced tomatoes, drained
1 can sweet corn
2 grilled chicken breasts, diced
Add:
1- 6 oz. package of cream cheese, cut into cubes
½ tsp. salt
Cook, and stir until cream cheese is melted. Add:
½ c. chopped cilantro, and cook for about 1 minute.

Serve on warm tortillas.

(Each burrito is about 6 Weight Watchers points!)
