Cheryl’s Spinach Salad

Cheryl’s Spinach Salad

Marinate dressing for several hours:

1 T. poppy seeds
1 c. oil
½ c. red wine vinegar
½ c. sugar
1 T. red onion, diced
½ tsp. dry mustard
1 tsp. salt

2 lbs. baby spinach
8 hard-boiled eggs, chopped
20 strips bacon, crumbled
3 avocados

Toss ingredients with dressing. Serves 12.
