Martha Stewart's Buttermilk Pancakes

I have NEVER been a big pancake person, but these are AMAZING! Addicting! Decadent! I can't imagine anyone not loving these babies. And the best part of all? Freeze the leftovers....Then I always have a hearty breakfast for my toddler, just 2 minutes away.

Buttermilk Pancakes

1 c. flour
2 T. sugar
2 tsp. baking powder
½ tsp. salt
½ tsp. baking soda
1 c. buttermilk
2 T. butter, melted
1 large egg
Optional: Blueberries, chocolate chips, etc.-- I'm a purist though!

Mix all the dry ingredients together in large bowl. Set aside. In medium bowl, whisk all remaining ingredients together. Then combine all together and mix until just moist (lumps are fine). Let batter sit for 5-10 minutes while you let the griddle heat. This is when the magic happens. It will get thick and almost frothy! That's when you know it's perfect.

Use a 1/4 c. measuring cup to pour onto a greased skillet. Cook until BARELY golden on each side. Pre-heat oven on the lowest setting and store the cooked pancakes on a cookie sheet.
Serve with buttermilk syrup.
