Bleu Bacon Chicken Quesadillas

These are perfect for a quick lunch or dinner and a great way to add a little extra protein to regular quesadillas.




Bleu Bacon Chicken Quesadillas

10 flour tortillas (we like the uncooked ones from Costco)
2 chicken breasts, cooked and shredded
1 pkg bacon, cooked and crumbled
2 c. shredded Monterey Jack cheese
1/2 c. blue cheese crumbles (or gorgonzola which is milder)
3 green onions, chopped
Blue Cheese Dressing or ranch dressing, for dipping

Butter one side of the tortillas. Layer half of the non buttered side with chicken, bacon, cheese, blue cheese crumbles and green onions. Fold in half and sprinkle tortillas with a little bit of salt. Place semi-circles on a cookie sheet and bake at 375 degrees for 10 minutes, or until cheese melts and tortillas are slightly crisp.


Cut into wedges and serve with blue cheese or ranch dressing.
